i think everyone should have a banana bread recipe in their artillery. i don't even like bananas, but mush it up in a bread and serve it to me warm with a generous heap of butter and i'm there. my dislike for bananas is history. i added a little walnuts and a sprinkling of sugar on top before a baked it. not part of the recipe i have, which is probably from my mother, but that's what i did. and it turned out very yummy.


1/2 c. margarine
1 c. sugar
2 eggs
2 c. flour
1 t. baking soda
1/2 t. salt
3 large bananas, mashed

cream butter and sugar in a mixer. beat in the eggs. mix in the dry ingredients. add bananas. put in a greased pan. bake 350 for 45-50 mins.

this is the first time i have baked since rorie was born. fittingly, it was also the first time i baked with rorie. i held her while i used the hand mixer and held her tiny hand up to it. she was mesmerized by the sound. i also cracked 2 eggs with one hand while holding a baby. that's a first. but she loved it. and so did i. and aaron and i enjoyed two pieces each this morning.
